Ingredients

  • 2 cups rhubarb, chopped
  • 2 cups strawberries, hulled and quartered
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1 cup custard, for serving

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. In a bowl, combine rhubarb, strawberries, granulated sugar, and lemon juice. Mix well and transfer to the prepared baking dish.

  3. In a separate bowl, combine flour, oats, brown sugar, cinnamon, and salt. Add the cold diced butter and use your fingers to rub it into the dry ingredients until the mixture resembles breadcrumbs.

  4. Sprinkle the crumble mixture evenly over the rhubarb and strawberry mixture in the baking dish.

  5. Bake in the preheated oven for 40 minutes, or until the crumble is golden and the filling is bubbling.

  6. Remove from the oven and let it cool slightly before serving.

  7. Serve warm with a generous drizzle of custard.
