How To Make Red Lentil Soup

A warm and comforting soup made with red lentils, vegetables, and aromatic spices.

Serves:

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the red lentils under cold water and set aside.

  2. In a large pot, heat some oil over medium heat. Add the onion and garlic and sauté until translucent.

  3. Add the carrots and celery and cook for another 5 minutes.

  4. Stir in the cumin and paprika, and cook for 1 minute.

  5. Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.

  6. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  7. Season with salt and pepper to taste.

  8. Serve the soup hot, garnished with fresh cilantro.
