How To Make Quick Roast Chicken & Homemade Oven Chips with Kiev Butter
A delicious and easy-to-make roast chicken dish with crispy homemade oven chips, served with a flavorful kiev butter.

Ingredients
- 1 whole chicken (approximately 3-4 lbs)
- 4 large potatoes
- 1/4 cup of olive oil
- Salt and pepper to taste
- for the kiev butter:
- 1/2 cup unsalted butter, softened
- 2 cloves of garlic, minced
- 2 tablespoons of chopped fresh parsley
- Juice of half a lemon
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

Place the whole chicken on a baking sheet and rub it with olive oil. Season with salt and pepper.

Scrub the potatoes and cut them into thick chips. Place them in a separate baking tray, drizzle with olive oil, and season with salt and pepper.

Place both trays in the preheated oven. Roast the chicken for 1 hour or until the internal temperature reaches 165°F (74°C). Bake the potatoes for 40-45 minutes or until crispy and golden brown.

While the chicken and potatoes are baking, prepare the kiev butter. In a small bowl, mix together the softened butter, minced garlic, chopped parsley, lemon juice, salt, and pepper.

Once the chicken and potatoes are cooked, remove them from the oven and let them rest for a few minutes.

Serve the roast chicken with the homemade oven chips and a dollop of kiev butter on top.
