How To Make Perfect Pad Thai
A flavorful and authentic Thai dish made with stir-fried rice noodles, vegetables, and a tangy sauce.

Ingredients
- 8 oz dried rice noodles
- 2 tbsp vegetable oil
- 2 garlic cloves, minced
- 2 shallots, thinly sliced
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 1 cup bean sprouts
- 2 green onions, sliced
- 1/4 cup unsalted peanuts, chopped
- 1 lime, cut into wedges
- Fresh cilantro, for garnish
- sauce:
- 3 tbsp fish sauce
- 2 tbsp tamarind paste
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes
Instructions

Place the rice noodles in a bowl of hot water and let them soak for about 10 minutes until softened. Drain and set aside.

In a small bowl, whisk together the sauce ingredients and set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and shallots, and cook for 1 minute until fragrant.

Add the carrots, bell pepper, and bean sprouts to the skillet. Cook for 3-4 minutes until the vegetables are crisp-tender.

Push the vegetables to one side of the skillet and add the drained rice noodles to the other side. Pour the sauce over the noodles and toss well to combine everything together.

Cook for 2-3 minutes, stirring constantly, until the noodles are heated through and evenly coated with the sauce.

Remove from heat and stir in the green onions and chopped peanuts.

Serve the Pad Thai hot, garnished with fresh cilantro and lime wedges on the side.
