How To Make Pea & Mint Soup

A refreshing and vibrant soup made with peas and fresh mint leaves.

Serves:

Ingredients

  • 2 cups frozen peas
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1/2 cup fresh mint leaves
  • Salt and pepper, to taste
  • 1/4 cup heavy cream

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.

  2. Add the frozen peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

  3. Add the fresh mint leaves and cook for another 2 minutes.

  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.

  5. Season with salt and pepper to taste.

  6. Stir in the heavy cream and heat the soup gently until warmed through.

  7. Serve hot with a garnish of fresh mint leaves.
