How To Make Paul’s Genoise Sponge
A light and delicate sponge cake, perfect for layering or enjoying on its own.

Ingredients
- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a mixing bowl, beat the eggs and sugar together until light and fluffy, about 5 minutes.

Sift the flour, cornstarch, and salt into the egg mixture. Gently fold until just combined.

Stir in the vanilla extract. Pour the batter into the prepared cake pan.

Bake for 20 minutes, or until the cake is golden brown and springs back when lightly touched.

Remove from the oven and let cool for 10 minutes in the pan. Then transfer to a wire rack to cool completely.
