How To Make New Potato Salad

A refreshing and flavorful salad made with new potatoes and a tangy dressing.

  • 1 pound new potatoes, halved or quartered
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white vinegar
  • Salt and pepper to taste


  1. Place the new potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 10-15 minutes. Drain and let cool.

  2. In a large bowl, combine the cooled potatoes, red onion, and fresh dill.

  3. In a small bowl, whisk together the mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Pour the dressing over the potato mixture and toss to coat.

  4. Serve the potato salad chilled. Enjoy!
