  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, cream together the butter, sugar, and lemon zest until light and fluffy.

  3. Beat in the egg, lemon juice, baking powder, and salt.

  4. Gradually add the flour and mix until well combined.

  5. Roll the dough into small balls and place them onto a lined baking sheet.

  6. Bake for 10-12 minutes or until the edges are golden brown.

  7. Let the biscuits cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely.

  8. Once cooled, sprinkle powdered sugar over the biscuits.
