How To Make Lemon & Ginger Shortbread

A mouth-watering shortbread infused with zesty lemon and warming ginger.

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 tsp lemon zest
  • 1 tsp ground ginger


  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.

  3. Add the flour, lemon zest, and ground ginger. Mix until well combined.

  4. Roll the dough into a cylinder shape and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.

  5. Slice the chilled dough into 1/4 inch thick rounds. Place on a baking sheet lined with parchment paper.

  6. Bake for 18-20 minutes or until the edges are lightly golden.

  7. Allow the shortbread to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
