How To Make Jambalaya

A flavorful Creole dish with chicken, sausage, and rice.

Ingredients

  • 2 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 lb andouille sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups chicken broth
  • 1 1/2 cups long-grain white rice

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.

  2. Add the chicken and cook until browned, about 5-7 minutes.

  3. Add the sausage, onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.

  4. Stir in the diced tomatoes, paprika, thyme, oregano, salt, and black pepper.

  5. Add the chicken broth and rice. Bring to a boil, then reduce the heat to low and cover.

  6. Simmer until the rice is cooked and most of the liquid has been absorbed, about 20-25 minutes.

  7. Remove the skillet from the heat and let sit covered for 5 minutes before serving.
