How To Make Jaffa Cakes

A delicious treat with a fluffy sponge base, tangy orange jelly, and a layer of dark chocolate.

Serves:

Ingredients

  • 2 eggs
  • 50g caster sugar
  • 50g self-raising flour
  • 4 tbsp orange jelly
  • 100g dark chocolate

Instructions

  1. Preheat the oven to 180°C and grease a muffin tin.

  2. In a bowl, whisk together the eggs and caster sugar until pale and fluffy.

  3. Sift in the self-raising flour and gently fold until well combined.

  4. Spoon the mixture into the muffin tin, filling each hole halfway.

  5. Bake for 10 minutes or until golden brown.

  6. Remove from the oven and let cool completely.

  7. Once cooled, spread a teaspoon of orange jelly over each sponge.

  8. Melt the dark chocolate in a bowl over simmering water, stirring until smooth.

  9. Spoon the melted chocolate over each jelly-topped sponge.

  10. Leave to set in the fridge for 30 minutes before serving.
