How To Make Gluten-Free Pasta Salad Recipe

A refreshing pasta salad perfect for summer gatherings, made without wheat or gluten.

Ingredients

  • 8 oz gluten-free pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/2 cup kalamata olives, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions.

  2. Drain pasta and rinse with cold water until cooled.

  3. In a large bowl, combine pasta, tomatoes, cucumber, olives, red onion, and parsley.

  4. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.

  5. Pour dressing over the pasta mixture and toss until well coated.

  6. Serve chilled.
