How To Make Gluten-Free Butternut Squash Pasta Recipe

A delicious pasta dish using gluten-free noodles and roasted butternut squash.

  • 8 oz gluten-free pasta noodles
  • 1 small butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


  1. Preheat oven to 400°F.

  2. Toss butternut squash cubes with olive oil, salt, and pepper. Roast on a baking sheet for 25 minutes or until tender and golden brown.

  3. While the squash is roasting, cook pasta according to package instructions.

  4. Drain pasta and stir in roasted butternut squash, Parmesan cheese, and parsley.

  5. Season with salt and pepper to taste and serve hot.
