How To Make Easy Lemon Muffins
These muffins are bursting with bright lemon flavor and are incredibly easy to make.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- zest of one lemon
- juice of one lemon
Instructions

Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate small bowl, whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
