Ingredients

  • 1 small cauliflower, cut into small florets
  • 2 medium carrots, sliced
  • 1 red onion, roughly chopped
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.

  2. In a large bowl, combine cauliflower, carrots, red onion, garlic, olive oil, cumin, coriander, paprika, salt, and pepper.

  3. Mix everything well to combine.

  4. Transfer the mixture to a baking sheet and spread it out evenly.

  5. Roast for 25-30 minutes or until the vegetables are tender and golden brown.

  6. Serve hot.
