A simple and flavorful side dish made with crushed potatoes, perfect for serving alongside any main course.

Ingredients

  • 1.5 pounds of small potatoes
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15 minutes, or until the potatoes are fork-tender.

  3. Drain the potatoes and transfer them to a baking sheet. Using the back of a fork, gently crush each potato.

  4. Drizzle the potatoes with olive oil, then sprinkle with minced garlic, salt, and black pepper.

  5. Bake the potatoes in the preheated oven for 15-20 minutes, or until they are crispy and golden brown.

  6. Remove from the oven and sprinkle with chopped fresh parsley.

  7. Serve hot and enjoy!
