How To Make CPK Baja Chicken Tacos
Tasty chicken tacos with a Baja twist!
Serves:
Ingredients
- 1 lb boneless chicken breasts, thinly sliced
- 1 tbsp olive oil
- 1 tbsp cumin powder
- 1 tbsp chili powder
- Salt and pepper, to taste
- 1/2 red onion, finely diced
- 1 red bell pepper, finely diced
- 1 jalapeno, seeded and finely diced
- 2 cloves garlic, minced
- Juice of 1 lime
- 8 small corn tortillas
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add chicken and season with cumin, chili powder, salt, and pepper. Cook until chicken is browned on the outside and cooked through.

Remove chicken from skillet and set aside.

In the same skillet, add onion, red bell pepper, jalapeno, and garlic. Sauté until vegetables are soft.

Add the chicken back in and stir in lime juice.

Warm tortillas and divide chicken mixture among them.

Serve with your favorite toppings, such as shredded lettuce, sour cream, and avocado.
