How To Make Courgette Pancake Fritters

These courgette pancake fritters are a delicious and healthy way to enjoy courgettes. They are crispy on the outside and fluffy on the inside.

  • 2 large courgettes, grated
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil, for frying


  1. Place the grated courgettes in a colander and sprinkle with salt. Let them sit for 10 minutes to release excess moisture. Then, squeeze out the liquid by pressing the courgettes with your hands.

  2. In a large bowl, combine the grated courgettes, chopped onion, minced garlic, flour, Parmesan cheese, eggs, salt, and black pepper. Mix well to form a batter.

  3. Heat a drizzle of olive oil in a large non-stick frying pan over medium heat.

  4. Spoon the batter onto the hot pan, forming small pancakes. Cook for about 2-3 minutes on each side until golden brown and crispy.

  5. Remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.

  6. Serve the courgette pancake fritters hot with a dollop of Greek yogurt or sour cream on top.
