How To Make Courgette Pancake Fritters
These courgette pancake fritters are a delicious and healthy way to enjoy courgettes. They are crispy on the outside and fluffy on the inside.

- 2 large courgettes, grated
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil, for frying

Place the grated courgettes in a colander and sprinkle with salt. Let them sit for 10 minutes to release excess moisture. Then, squeeze out the liquid by pressing the courgettes with your hands.

In a large bowl, combine the grated courgettes, chopped onion, minced garlic, flour, Parmesan cheese, eggs, salt, and black pepper. Mix well to form a batter.

Heat a drizzle of olive oil in a large non-stick frying pan over medium heat.

Spoon the batter onto the hot pan, forming small pancakes. Cook for about 2-3 minutes on each side until golden brown and crispy.
