  • 4 eggs
  • 1/2 cup coconut flour
  • 1/2 cup milk (dairy or non-dairy)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt
  • Coconut oil for cooking

Instructions

  1. In a mixing bowl, beat the eggs until well combined.

  2. Add the coconut flour, milk, maple syrup, vanilla extract, baking powder, and salt. Mix until smooth.

  3. Heat a non-stick skillet over medium heat and add a small amount of coconut oil.

  4. Pour about 1/4 cup of batter onto the skillet for each pancake.

  5. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.

  6. Repeat with the remaining batter.

  7. Serve the pancakes warm with your favorite toppings such as fresh berries, maple syrup, or coconut flakes.
