How To Make Classic Potato Latkes
These crispy potato pancakes are a classic Hanukkah dish, perfect as a side or appetizer.

Ingredients
- 4 large potatoes, peeled and grated
- 1 onion, grated
- 2 eggs, beaten
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- Vegetable oil, for frying
- Sour cream and applesauce, for serving
Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture. Transfer to a large bowl.

Add the grated onion, beaten eggs, flour, and salt to the bowl with the potatoes. Mix well to combine.

Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom of the pan.

Drop spoonfuls of the potato mixture into the hot oil and flatten with a spatula to form pancakes. Cook for 3-4 minutes per side, until golden brown and crispy.

Drain the latkes on paper towels to remove any excess oil. Repeat the process with the remaining potato mixture.

Serve the latkes hot with sour cream and applesauce on the side.
