Chickpea & Coriander Burgers Recipe

How To Make Chickpea & Coriander Burgers

These flavorful burgers are made with mashed chickpeas and fresh coriander, perfect for a vegetarian meal.

Serves:

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh coriander
  • 1/4 cup diced red onion
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a food processor, pulse the chickpeas until they are mostly mashed.

  2. Transfer the mashed chickpeas to a large bowl and add the breadcrumbs, fresh coriander, red onion, garlic, ground cumin, ground coriander, cayenne pepper, salt, and black pepper. Mix until well combined.

  3. Divide the mixture into 4 equal portions and shape each portion into a patty.

  4. Heat the olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes per side, until golden brown and heated through.

  5. Serve the chickpea and coriander burgers on buns with your favorite toppings and condiments.
