How To Make Chickpea & Coriander Burgers
These flavorful burgers are made with mashed chickpeas and fresh coriander, perfect for a vegetarian meal.

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh coriander
- 1/4 cup diced red onion
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions

In a food processor, pulse the chickpeas until they are mostly mashed.

Transfer the mashed chickpeas to a large bowl and add the breadcrumbs, fresh coriander, red onion, garlic, ground cumin, ground coriander, cayenne pepper, salt, and black pepper. Mix until well combined.

Divide the mixture into 4 equal portions and shape each portion into a patty.

Heat the olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes per side, until golden brown and heated through.

Serve the chickpea and coriander burgers on buns with your favorite toppings and condiments.
