How To Make Chicken Liver Pâté
A rich and creamy appetizer made with chicken livers.
Serves:
Ingredients
- 300g chicken livers
- 1 small onion, diced
- 2 cloves of garlic, minced
- 4 tbsp butter
- 2 tbsp brandy or cognac
- 1 tsp thyme leaves
- Salt and pepper to taste
- Baguette or crackers, for serving
Instructions

Heat 2 tbsp of butter in a pan over medium heat. Add the diced onion and minced garlic, and cook until softened.

Add the chicken livers to the pan and cook for 5-6 minutes, until cooked through but still slightly pink in the center.

Remove the pan from the heat and let it cool slightly. Transfer the mixture to a blender or food processor.

Add the remaining 2 tbsp of butter, brandy or cognac, thyme leaves, salt, and pepper. Blend until smooth and creamy.

Taste and adjust seasoning if needed.

Transfer the chicken liver pâté to a serving dish or individual ramekins.

Chill in the refrigerator for at least 1 hour before serving.

Serve with slices of baguette or crackers.
