Chicken Liver Pâté Recipe

How To Make Chicken Liver Pâté

A rich and creamy appetizer made with chicken livers.

Serves:

Ingredients

  • 300g chicken livers
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 4 tbsp butter
  • 2 tbsp brandy or cognac
  • 1 tsp thyme leaves
  • Salt and pepper to taste
  • Baguette or crackers, for serving

Instructions

  1. Heat 2 tbsp of butter in a pan over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the chicken livers to the pan and cook for 5-6 minutes, until cooked through but still slightly pink in the center.

  3. Remove the pan from the heat and let it cool slightly. Transfer the mixture to a blender or food processor.

  4. Add the remaining 2 tbsp of butter, brandy or cognac, thyme leaves, salt, and pepper. Blend until smooth and creamy.

  5. Taste and adjust seasoning if needed.

  6. Transfer the chicken liver pâté to a serving dish or individual ramekins.

  7. Chill in the refrigerator for at least 1 hour before serving.

  8. Serve with slices of baguette or crackers.
