How To Make Cauliflower Cheese Soup

A creamy and comforting soup made with fresh cauliflower and melted cheese.

  • 1 medium-sized cauliflower, cut into florets
  • 2 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste


  1. In a large pot, melt butter over medium heat. Add diced onion and minced garlic, and cook until onion becomes translucent.

  2. Add cauliflower florets to the pot and pour in vegetable broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until cauliflower is tender.

  3. Using an immersion blender or regular blender, puree the soup until smooth.

  4. Return soup to the pot and stir in shredded cheddar cheese and milk. Cook over low heat until the cheese is melted and the soup is heated through. Season with salt and pepper to taste.

  5. Serve hot and enjoy!
