How To Make Blueberry & Lemon Friands
A light and tangy dessert filled with juicy blueberries and zesty lemon flavor.

Ingredients
- 1 cup almond flour
- 1/2 cup powdered sugar
- 1/4 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 4 egg whites
- 1 tsp lemon zest
- 1/2 cup fresh blueberries
Instructions

Preheat oven to 350°F (180°C). Grease a friand pan or muffin tin.

In a bowl, combine almond flour, powdered sugar, and all-purpose flour.

In a separate bowl, whisk together melted butter, egg whites, and lemon zest.

Gradually add the dry ingredients to the wet ingredients, stirring until well combined.

Gently fold in the blueberries.

Spoon the batter into the prepared pan, filling each cavity about 3/4 full.

Bake for 25 minutes or until the friands are golden brown and a toothpick inserted into the center comes out clean.

Allow the friands to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
