How To Make Black Bean Chilli
A hearty and flavorful vegetarian chilli made with black beans, spices, and vegetables.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, sliced green onions, chopped cilantro
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, and jalapeno pepper. Cook until vegetables are softened, about 5 minutes.

Stir in the chili powder, cumin, and paprika. Cook for an additional minute.

Add the black beans, diced tomatoes, and vegetable broth to the pot. Bring to a simmer and let cook for 20 minutes, stirring occasionally.

Season with salt and pepper to taste.
