How To Make Black Bean Chilli

A hearty and flavorful vegetarian chilli made with black beans, spices, and vegetables.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, sliced green onions, chopped cilantro

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, and jalapeno pepper. Cook until vegetables are softened, about 5 minutes.

  2. Stir in the chili powder, cumin, and paprika. Cook for an additional minute.

  3. Add the black beans, diced tomatoes, and vegetable broth to the pot. Bring to a simmer and let cook for 20 minutes, stirring occasionally.

  4. Season with salt and pepper to taste.

  5. Serve hot with desired toppings.
