Ingredients

  • 2 medium beetroots, grated
  • 2 eggs
  • 1/2 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.

  2. In a medium bowl, whisk the eggs, sugar, vegetable oil, Greek yogurt, and vanilla extract together.

  3. In another bowl, mix the grated beetroot, cocoa powder, flour, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.

  5. Pour the batter into the prepared baking dish and smooth the top.

  6. Bake for 25 minutes or until a toothpick inserted into the center comes out with a few crumbs.

  7. Allow the brownies to cool completely before cutting into squares.

  8. Serve and enjoy!
