  • 2 ripe bananas
  • 2 cups rolled oats
  • 1 cup milk (any kind)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Honey or maple syrup, for serving
  • Sliced bananas, for serving

Instructions

  1. In a blender, combine bananas, oats, milk, eggs, vanilla extract, baking powder, and salt. Blend until smooth.

  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

  3. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until the edges are set and bubbles form on the surface.

  4. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.

  5. Serve the pancakes warm with honey or maple syrup and sliced bananas.
