Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups buttermilk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries
  • Butter or oil for cooking

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, beat the eggs, buttermilk, and melted butter until well combined.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

  4. Gently fold in the blueberries.

  5. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.

  6. Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface.

  7. Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.

  8. Serve the pancakes warm with maple syrup and additional blueberries, if desired.
