Ingredients

  • 2 chicken breasts, cooked and shredded
  • 2 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup chopped cucumber
  • 1/4 cup sliced scallions
  • 1/4 cup chopped cilantro
  • For the dressing:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon wasabi paste

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and wasabi paste to make the dressing.

  2. In a large mixing bowl, combine shredded chicken, cooked rice, shredded carrots, chopped cucumber, scallions, and cilantro.

  3. Pour the dressing over the salad and toss until well coated.

  4. Serve immediately or refrigerate for an hour to let the flavors meld together.

  5. Optional: garnish with additional scallions and cilantro before serving.
