Ingredients

  • 1 lb scallops
  • 2 tbsp vegetable oil
  • 1/4 cup sweet chili sauce
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp lime juice
  • Salt, to taste
  • Chopped cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Pat dry the scallops with paper towels and season them with salt.

  2. Heat the vegetable oil in a large skillet over medium-high heat.

  3. Add the scallops to the skillet and cook for 2-3 minutes on each side, or until they are golden brown and cooked through.

  4. Remove the scallops from the skillet and set aside.

  5. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.

  6. Stir in the sweet chili sauce, soy sauce, honey, and lime juice. Cook for 2-3 minutes, or until the sauce is heated through.

  7. Return the seared scallops to the skillet and toss them in the sauce until they are well coated.

  8. Remove from heat and garnish with chopped cilantro.

  9. Serve the scallops with lime wedges on the side.
