Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 stalks lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. In a bowl, combine lemongrass, garlic, soy sauce, fish sauce, honey, vegetable oil, black pepper, salt, and lime juice.

  2. Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the fridge for at least 2 hours or overnight.

  3. Preheat grill to medium-high heat.

  4. Grill the chicken for 5-7 minutes per side, or until cooked through and slightly charred.

  5. Remove from the grill and let it rest for a few minutes. Slice the chicken into thin strips.

  6. Serve the grilled lemongrass chicken with steamed rice or noodles.

  7. Garnish with fresh cilantro.
