Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 2 tbsp green curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tbsp palm sugar or brown sugar
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 cup fresh basil leaves
  • Juice of 1 lime
  • Salt, to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Add green curry paste and cook for 1 minute until fragrant.

  2. Add chicken pieces to the skillet and cook until browned on all sides.

  3. Pour in coconut milk, chicken broth, fish sauce, and palm sugar. Stir to combine and bring to a simmer.

  4. Add green beans and red bell pepper to the skillet. Cook for 10-15 minutes until vegetables are tender and chicken is cooked through.

  5. Stir in basil leaves and lime juice. Season with salt to taste.

  6. Serve hot with steamed rice.
