Ingredients

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a large bowl, combine the grated zucchini, vegetable oil, granulated sugar, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Fold in the chopped walnuts, if using.

  6. Pour the batter into the greased loaf pan and smooth the top.

  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let the bread cool in the pan for 10 minutes.

  9. Transfer the bread to a wire rack to cool completely before slicing and serving.
