  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. In another bowl, whisk together the buttermilk, eggs, and melted butter.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Lightly grease the waffle iron with non-stick spray or melted butter.

  6. Spoon about 1/2 cup of the cornbread batter onto the preheated waffle iron.

  7. Close the lid and cook for about 5-7 minutes, or until golden brown and crispy.

  8. Carefully remove the cornbread waffle from the iron and repeat with the remaining batter.

  9. Serve the waffle iron cornbread warm with butter or your favorite topping.
