Our amazing pecan coconut banana bread recipe is the ultimate bread that’s packed with coconut and pecans, and topped with a tasty streusel topping!

Serves:

Ingredients

  • ½cupvanilla yogurt
  • 1egg
  • 1â…“cupsbananas,(3 medium bananas), mashed
  • 3tbspvegetable oil
  • 1â…“cupflour
  • ½cupsugar
  • 1tspbaking soda
  • ¼tspsalt
  • ½cuppecans,chopped
  • ½cupcoconut,shredded

For Streusel Topping:

  • 3tbspflour
  • 3tbspbrown sugar
  • 2tbspbutter
  • 2tbspcoconut
  • 2tbsppecans

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9×5-inch loaf pan.

  2. In a large bowl, combine the flour, sugar, baking soda, salt, pecans, and coconut.

  3. In a separate bowl, combine the yogurt, egg, oil, and bananas.

  4. Add to the flour mixture, then stir just until moistened. Do not overmix.

  5. Pour the batter into the prepared pan.

Streusel Topping:

  1. Combine the flour, brown sugar, butter, coconut, and pecans until crumbly.

  2. Sprinkle the topping over the batter.

  3. Bake for 55 to 65 minutes, or until a toothpick comes out clean.

  4. Serve warm, and enjoy!
