How To Make Nutty Chocolate Zucchini Bread

Nutty and moist, this chocolate zucchini bread serves a delightful baked treat, made with bittersweet chocolate, walnuts, and oats, for a loaded bite.

Ingredients

  • 4ozbittersweet chocolate
  • 1cupall purpose flour
  • ½cupwhole wheat flour
  • quick cooking rolled oats
  • 1tspbaking soda
  • ½cupbutter
  • ½cupgranulated sugar
  • 2eggs
  • 2tbspplain yogurt
  • 1tspvanilla
  • ½tsplemon rind,grated
  • 2cupszucchini,finely shredded
  • ½cupwalnuts,chopped

Instructions

  1. Melt the chocolate in a small pot over low heat. Reserve.

  2. Preheat the oven to 350 degrees F.

  3. Combine the flours, oats and baking soda in a medium bowl. Reserve.

  4. Cream together the butter and sugar in a separate bowl until fluffy. Add the eggs, yogurt, vanilla and lemon rind, beating well.

  5. Stir in the zucchini. Add the flour mixture, a ⅓ at a time, until combined. Beat in the walnuts and melted chocolate.

  6. Spread batter in a greased 9×5-inch loaf pan. Bake for 45 minutes, or until a toothpick inserted comes out clean.

  7. Cool in pan on a wire rack, and then turn out of pan.

  8. Serve and enjoy.
