How To Make Honeyed Carrot & Thyme Loaf

Ingredients
- 2 cups grated carrots
- 1/4 cup honey
- 1/4 cup melted butter
- 2 eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp fresh thyme leaves
Instructions

Preheat the oven to 350°F (175°C) and grease a loaf pan.

In a large bowl, combine the grated carrots, honey, melted butter, and eggs. Mix well.

In a separate bowl, whisk together the flour, baking powder, salt, and thyme leaves.

Gradually add the dry ingredients to the carrot mixture, stirring until just combined.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the loaf cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
