A unique cornbread meal that combines crawfish tails into the mixture. It also includes bits of jalapeno pepper for that extra spicy kick.

Ingredients

  • 2 cup cornmeal
  • 1 tbsp salt
  • 1 tsp baking powder
  • 6 eggs
  • 2 medium onions, chopped
  • ½ cup jalapeno pepper, chopped
  • 16 oz cheddar cheese, grated
  • â…” cup oil
  • 32 oz creamed corn
  • 2 lbs crawfish tails, peeled

Instructions

  1. In a large mixing bowl, combine cornmeal, salt and soda.
  2. In a medium bowl, beat eggs thoroughly.
  3. Add onions, jalapeno peppers, cheese, oil, corn and crawfish tails to beaten eggs.
  4. Combine this mixture with the cornmeal mixture and mix well.
  5. Pour into greased 12 x 14-in. baking dish.

  6. Bake at 375 degrees F for 55 minutes or until golden brown.
