  • 7beefsteak tomatoes
  • 2clovesgarlic,minced
  • ¼red onion,small, chopped
  • 1tbspextra virgin olive oil
  • 2tbspbalsamic vinegar
  • Olive oil spray
  • 8basil leaves,fresh, chopped
  • kosher salt
  • freshly ground black pepper,to taste
  • 16ozbaguette,or French bread
  • 2clovesgarlic,peeled


  1. Combine tomatoes, chopped garlic, red onion, vinegar, oil, salt, pepper, and basil.

  2. Set aside.

  3. Slice bread into ½ inch thick slices.

  4. Place on a tray and spray lightly with olive oil.

  5. Toast bread under the broiler until golden.

  6. When bread is toasted, rub each piece with whole garlic clove.

  7. Place bread on a platter and top with tomato mixture.

  8. Serve immediately to avoid making the bread soggy.
