For Italian Salad:
- 5mixed greens
- ½small red onion,peeled, thinly sliced
- 2cupscherry tomatoes
- 2cupscroutons
- ½cupParmesan cheese,freshly-grated, plus extra for topping
- ⅓cuppepperoncini peppers
For Italian Vinaigrette:
- 3tbspoil
- 1tbspred wine vinegar
- 1tspdijon mustard
- ½tsporegano
- ½tspfine sea salt
- ¼tspblack pepper
- 1small garlic glove,minced, or ½ tsp garlic powder
Instructions
Italian Vinaigrette:

Whisk the oil, vinegar, mustard, oregano, salt, pepper, and garlic together in a bowl until combined.

Taste, then add additional sweetener if desired. Set aside.
Italian Salad:

Combine the greens, onion, tomatoes, croutons, parmesan cheese, and pepperoncini peppers in a large salad bowl. Drizzle evenly with the vinaigrette, then toss until evenly combined.
