Ingredients

  • 250g watercress
  • 500g Jersey Royals, boiled and halved
  • 4 shallots, peeled and quartered
  • 1 bunch of radishes, sliced
  • 1 cup white vinegar
  • 1 cup water
  • 2 tbsp sugar
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a saucepan, bring the white vinegar, water, sugar, and a pinch of salt to a boil. Add the sliced radishes and simmer for 5 minutes. Remove from heat and let it cool.

  3. Meanwhile, toss the halved Jersey Royals with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden brown.

  4. In another baking dish, toss the quartered shallots with olive oil, salt, and pepper. Roast them for 20 minutes until caramelized.

  5. In a large salad bowl, combine the watercress, roasted Jersey Royals, roast shallots, and pickled radish.

  6. Drizzle with balsamic vinegar, olive oil, salt, and pepper. Toss well to combine.

  7. Serve the watercress salad with boiled Jersey Royals, roast shallots, and pickled radish as a refreshing side dish or a main course.
