  • 6 cups baby spinach
  • 1 cup cherry tomatoes, halved

  • 1/4 cup chopped walnuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the baby spinach, cherry tomatoes, goat cheese, and walnuts.

  2. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss to evenly coat.
