Ingredients

  • 1 small red cabbage, thinly sliced
  • 2 medium beetroots, grated
  • 2 medium apples, thinly sliced
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of toasted walnuts
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the red cabbage, grated beetroots, sliced apples, fresh parsley, and toasted walnuts.

  2. In a small bowl, whisk together the apple cider vinegar, extra virgin olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss until all ingredients are well coated.

  4. Allow the salad to sit for 5 minutes to allow the flavors to meld together.

  5. Serve the salad chilled and enjoy!
