  • 8 cups mixed salad greens
  • 8 slices pancetta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced red onion
  • 1/2 cup sliced kalamata olives
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Place the pancetta slices on a baking sheet and bake until crispy, about 10 minutes. Remove from the oven and let cool.

  2. In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, kalamata olives, and Parmesan cheese.

  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  4. Crumble the cooled pancetta over the salad and drizzle the dressing on top. Toss gently to combine.

  5. Serve immediately and enjoy.
