How To Make Quinoa, Squash & Broccoli Salad

  • 1 cup quinoa
  • 1 small butternut squash, peeled and diced
  • 1 head broccoli, cut into florets
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


  1. Cook the quinoa according to package instructions and set aside.

  2. Preheat the oven to 400°F (200°C). Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Place onto a baking sheet and roast for 15-20 minutes, or until tender.

  3. In a steamer basket, steam the broccoli florets for about 5 minutes, or until they turn bright green and are cooked but still crisp. Set aside to cool.

  4. In a large bowl, combine the cooked quinoa, roasted butternut squash, steamed broccoli, dried cranberries, and chopped walnuts.

  5. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  6. Serve the quinoa, squash & broccoli salad chilled or at room temperature.
