Ingredients

  • 1 lb of steak
  • 4 cups of mixed greens
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of red onion, thinly sliced
  • 1/2 cup of blue cheese crumbles
  • 1/4 cup of walnuts, chopped
  • 1/4 cup of extra virgin olive oil
  • 2 tbsp of red wine vinegar
  • 1 tsp of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Season the steak with salt and pepper.

  2. Grill the steak for about 4-5 minutes per side for medium-rare or until desired doneness. Let it rest for 5 minutes and then slice it thinly.

  3. In a large bowl, combine the mixed greens, cherry tomatoes, red onion, blue cheese crumbles, and walnuts.

  4. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.

  5. Drizzle the vinaigrette over the salad and toss until well coated.

  6. Serve the salad topped with the sliced steak.
