How To Make Hawaiian Chicken Salad Recipe

Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups of mixed salad greens
- 1 cup of diced pineapple
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of chopped cilantro
- 1/4 cup of sliced almonds
- 1/4 cup of shredded coconut
- for the dressing:
- 1/4 cup of pineapple juice
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of grated ginger
- 1 clove of garlic, minced
- Salt and pepper to taste

Preheat the grill or grill pan over medium heat. Season the chicken breasts with salt and pepper.

Grill the chicken for about 6-8 minutes per side, or until cooked through. Allow it to rest for a few minutes, then slice it into thin strips.

In a large bowl, combine the salad greens, diced pineapple, cherry tomatoes, red onion, cilantro, sliced almonds, and shredded coconut.
