Ingredients

  • 2 cups cooked bulgur wheat
  • 2 medium-sized beetroots, grated
  • 1 cup chopped cucumber
  • 1 cup chopped parsley
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped red onion
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked bulgur wheat, grated beetroot, cucumber, parsley, mint leaves, and red onion.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss well to combine.

  4. Serve chilled and enjoy!
