How To Make Winter Cobb Salad

Savor a zesty and fruity bite in this winter cobb salad, made with crunchy lettuce, tender chicken, and crispy bacon, tossed in a tangy orange vinaigrette.

  • 6cupsromaine lettuce,chopped
  • 2small chicken breast
  • 2eggs,hard boiled, quartered
  • 4slicesbacon,diced
  • 1avocado,sliced
  • 1pear,sliced
  • ½cuppomegranate arils
  • ¼cupfeta cheese

For Orange Vinaigrette:

  • 2tbspfresh orange juice
  • 2tbspcanola oil
  • 1tbspwhite wine vinegar
  • 2tsphoney
  • ½tsporange zest
  • 1pinchsalt


  1. Mix vinaigrette ingredients together in a jar. Set aside.

  2. Cook bacon over medium heat in a skillet until crispy. Remove and drain on paper towel lined plate. Leave 1 to 2 tablespoons of grease in the skillet.

  3. Season chicken on both sides with salt and pepper. Cook over medium high heat in the pan of bacon grease for about 5 minutes per side or until cooked through. Slice when cooled down.

  4. Place lettuce in a large bowl. Add the chicken, eggs, pear, bacon, avocado, pear, pomegranate, and feta.

Orange Vinaigrette:

  1. Combine all vinaigrette ingredients in a bowl.

  2. Drizzle vinaigrette on top, toss, and serve. Enjoy!
