How To Make Watermelon Salad with Mint and Ginger

The rare combination of watermelon, min, and ginger is perfectly blended in a one salad dish topped with ground black pepper and rice wine vinegar.

Ingredients

  • 4 tbsp sugar
  • ¼ tsp salt
  • 2 tbsp fresh ginger, minced
  • 4 tbsp rice wine vinegar
  • 2 tbsp fresh mint leaves, chopped
  • 4 cups watermelon, cubed
  • tsp coarsely ground black pepper

Instructions

  1. Place sugar, salt, ginger, and vinegar in a microwave-safe measuring cup, and process on high until mixture is bubbly and sugar is dissolved.

  2. Pour through a strainer and let cool slightly.

  3. Place watermelon and mint in a serving bowl and drizzle with the ginger syrup.

  4. Toss together.

  5. Refrigerate for 20 minutes to blend flavors.

  6. Sprinkle with pepper, and garnish with a mint sprig.
